I think I already answered this on another question, but if you want a living one I’d have to say Elon Musk, otherwise its between Wernher Von Braun and Nikola Tesla
Hmm:
Brunel (Trains, boats, bridges, tunnels, pretty much anything big and 19th century he was probably involved).
Someone from the electronics/computing world like Sophie Wilson, who helped to design the ARM microprocessor that can now be found in just about every mobile phone and tablet computer on the planet in one form or another.
Neil has some pretty good answers… oh wait, did you mean of all engineers ever?!
The ones in the answers above I also would say! Tesla was an amzing guy. Elon Musk is basically the real-world Tony Stark. Brunel built half of England, it seems sometimes!! Da Vinci was ahead of his time by centuries.
I’d also suggest John Bardeen, the only guy to win not one but two Nobel Physics prizes (and along the way allowing all computers and phones to be made…) and James Watt whose work on steam engines made perhaps the single most material improvement to humanity ever by allowing the industrial revolution to really get started!
